San Francisco is both a district and a farm run by Edgar Fallas Solis and family for 55 years. They grow coffee, along with avocados, citrus, and bananas. The original coffee variety grown was Caturra, but Catuai and Catimor varieties have been added and get seedlings from ICAFE.
Edgar prioritizes eco-friendly practices and plans to increase organic fertilization. They monitor cherry sugar content and harvest when optimal, with 15 workers during peak season. Cherries are processed based on sugar content, and drying is done until the coffee reaches 10.5% moisture.
